Cooking lesson 2 with Kim / キムさんとのクッキングレッスン 2

We made chicken and sweet potato karaage, inari zushi and mango salad during our cooking lesson today.

Chicken karaage took some time to make it since we had to soak chicken in some sauce that got sake, mirin, soy sauce, ginger and sanshou. After that we made some batter that was made by eggs and potato starch. It is important to keep the temperature of oil high when you fry some chicken, so we had to fry chicken for 10 seconds, put it out from oil for 20 seconds in order to raise oil temperature again, then fry it in oil again. We refried chicken like that for 4 times before eating it. I was sweating when I finished frying chicken!

Kim told me she did not like how inari taste sweet. I decided to cook aburaage without adding sugar. I cooked them with soy sauce, dashi, mirin and sake.

Kim decided to cut up some mangos to make some mango&tomato salad. Mangos are delicious right now.

Kim's son and his friends loved eating chicken karaage.
