Katukura again / またまたかつくら

I ate some Tonkatsu with Masumi at Katsukura for lunch today.

かつくらでまーちゃんとランチ。

Mia enjoyed sitting in a high chair and she watched chefs cooking in the kitchen.

娘はハイチェアに座れて喜んでいた。

I ordered fillet cutlet and grated yam lunch set.
It was delicious as usual!

麦とろヒレかつ膳をオーダ。相変わらず美味しかった♥

AIN Japanese cooking lesson / AINでのお料理教室

I had a chance to teach a Japanese cooking lesson for Austin Intercultural Network.

オースチン インターカルチャー ネットワークという団体で日本食のクッキングレッスンをやってきた。

We cooked some sweet potato miso soup, tonkatsu and mitarashi dango.

今回のメニューははさつまいものみそ汁ととんかつとみたらし団子。

Not only I got to teach them how to cook some Japanese dishes, but also I got to talk about Japanese culture.

短時間でパッパと料理しなければいけなかったので大変だったけど、ご飯の作り方以外にも日本の文化についても語ったりしクラスは楽しく教えられた。

The class was fun; I hope to have another class soon!

Tonkatsu cooking lesson in Texas! / テキサスでのとんかつレッスン

I had my first cooking lesson in Texas this morning. It was exciting. I visited Kim's place to teach her how to make some spinach and onion miso soup, tonkatsu and tamagoyaki (sweetened egg).

キムさんのお家にお邪魔して朝からとんかつのレッスンをしてきました。テキサスでは初めてのクッキングレッスンだったのでとってもドキドキでした。

I was impressed by how efficient and fast Kim was in her kitchen.

キムさんはとにかく台所でよく動いてくれたのでお料理がとても早く進みました。

We used peanut oil for frying, so Tonkatsu came out crispy and golden.

揚げ油にはピーナッツオイルを使ったのでとんかつが綺麗に揚がりました。

I think I put too much sake in my tamagoyaki (sweetened egg), but sake in tamagoyaki tasted good.

卵焼きにちょっとお酒を入れすぎた•••
食べたら酔っぱらうのではと思ったけど大丈夫でした 笑

Tonkatsu cooking lesson with Piper and Ginger / パイパーさんとジンジャー ちゃんのとんかつレッスン

I went to Piper's apartment to give a tonkatsu cooking lesson. Her daughter, Ginger was there to help us cook too. Ginger made sweet frosted strawberries as our dessert.

今回はパイパーさんのお宅にお邪魔してとんかつのクッキングレッスン。娘のジンジャーちゃんもお料理を手伝ってくれました。ジンジャーちゃんは可愛いエプロンを着けて甘いフロスティング付きのイチゴのデザートを作ってくれました。

Piper got interesting tomatoes from Whole Foods. They had a lot more flavor than usual tomatoes. I enjoyed eating them very much.

パイパーさんが珍しいトマトを買ってきてくれました。イタリアでよく食べられるトマトだそうです。普通のトマトと比べるともっと味があってとっても美味しかった。

Tonkatsu came out well this time too. We ate a lot!

とんかつはとても美味しくできました。ちょっといっぱい食べ過ぎちゃった。

Tonkatsu cooking lesson / とんかつクッキングレッスン

After the okonomiyaki cooking lesson, I went to Bonnie's apartment to give her tonkatsu cooking lesson. Her boys, Sam and Ben helped us too. We also made some Japanese sweet potato miso soup and spinach gomaae.

お好み焼きのクッキングレッスンの後でポニーさんにとんかつとおみそ汁とほうれん草の胡麻和えの作り方も教えて欲しいと言われさっそくボニーさんのお家にお邪魔してボニーさんの息子さん2人もまぜてレッスンする事になりました。

We peeled skin of Japanese sweet potatoes and cooked them in boiling water for 10 min. Then added some miso paste with dashi and green onions.

アメリカのサツマイモは日本のサツマイモよりは水っぽくて美味しくないと私は感じます。最近ではアジアのスーパーに行けば日本のサツマイモが手に入るので日本のサツマイモを食べた事がないと言ったボニーさんにおすすめしてお味噌汁に入れる事にしました。

Cleaned spinach in cold water; cooked it for 1 min in boiling water with salt. Drained hot water, cooled it down with cold water and chop it up. Toasted grind white sesame seeds in a pan until they smelled good. Mixed 1 teaspoon sugar, 1/2 teaspoon sake, 2 teaspoon mirin and 2 teaspoon soy sauce in the bowl. After that put toasted sesame seeds a bowl with the mixture and mixed them together. Combined this sesame seeds mixture like salad dress with spinach.

ほうれん草の胡麻和えはポールに砂糖、みりん、酒、醤油を入れて混ぜてそれにフライパンで煎ったすりゴマを加え、食べる直前にゆでたほうれん草を入れて混ぜました。久しぶりに食べたので感動してしまった。

I think making tender tonkatsu is hard, but we did a great job this time because Bonnie pounded the pork meat really well! We massaged some salt and pepper into the meat after pounding.

とんかつを柔らかくジューシーにするには豚肉を良く叩く事が大事。ボニーさんが一生懸命叩いてくれたので柔らかくて美味しいトンカツになりました。叩いた後は塩と胡椒でお肉をマッサージ。

Ben and Sam helped us to put some flour, eggs with oil and panko on the pork meat before frying in a pan. They did a great job!!!

ベンとサムには下準備した後のお肉に小麦粉と油を少し加えた卵とパン粉をつけて揚げてもらいました。

Here is the finished one! Our tonkatsu was delicious!

とても美味しく出来上がりました。

Bonnie's husband joined us a bit right before his soccer practice.
